I'm joining Sandra at Diary of a Stay At Home Mom for Slow Cooking Thursday. If you've got a great recipe to share or you'd like to try a new one for these cooler days of fall head on over to her place.
Crock Barbecue Beef
1 Beef Roast (any size to suit your family, any cut that you like. I usually get the one on sale that week)
1 1/2 tsp. salt
1 medium onion, finely chopped
1/4 cup ketchup
1/3 cup smokey type barbque sauce (like mesquite or hickory smoke)
very spare 1/4 cup vinegar
1 Tbsp. worcestershire sauce
1/4 tsp. fresh cracked pepper
1 whole bay leaf
tomato paste
kaiser buns
Rub the roast with the salt. Put into crockpot. Mix remaining ingrediants except tomato paste and pour over top of roast. Cover and cook on high 4 - 5 hours or on low 6 - 8 hours until tender. Remove roast and let rest for 10 - 15 minutes. Slice very thin. Add tomato paste 1 Tbsp. at a time until desired thickness for sauce is acheived. Return roast to sauce. Serve in sliced kaiser buns. I let each person add the amount of meat & sauce they desire to their buns themselves. My hubby & older daughter like it drier while me and the other kids like it saucy. It's great with a nice green salad on the side and tater gems.
