Honey Sesame Chicken

I'm not sure where I came across this recipe, it's been in my files forever, but it really is too good not to share.  I adapted it a bit to fit the size of my family's appetite. It's easy and it uses the crockpot, two of my favorite things in a recipe!

Crockpot Honey Sesame Chicken
Serves 4-6

-1 doz chicken thighs, skin removed
-salt and pepper
-1 cup honey
-1/2 cup soy sauce
-1/2 cup diced onion (approx. 1 small - medium onion)
-1/4 cup ketchup
-2 Tbsp. oil
-2 cloves garlic, crushed or minced
-1/4 tsp red pepper flakes
-4 tsp cornstarch
-1/2 Tbsp sesame seeds (or more to taste)
-3 green onions (scallions), chopped

-cooked orzo, rice, or noodles

Lightly season both sides of the chicken with salt and pepper.  Place in crockpot.

In a medium bowl, mix together honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes.  Pour over chicken.  Cook on low for 4 hours.

(I know in crockpot cooking this is a no-no, but 3/4 of the way through the cooking I stirred the chicken so that all pieces would get a nice glaze and not have dry spots.  It turned out beautiful!)

With a slotted spoon, remove chicken from the crock, keep covered.  Dissolve the cornstarch in 1/3 cup water and pour into crock.  Stir, replace lid and cook ON HIGH for about 10 minutes until slightly thickened.  Pour back over chicken in serving bowl and sprinkle with sesame seeds and scallions.

I served this with orzo but you can also use rice or noodles.

Or to make a "bowl" you can shred the chicken.  Place rice or chinese noodles in bowl, top with chicken and sauce and then sprinkle with seeds and scallions.
