All This Celebrating Makes One Sleepy Girl


This is my baby girl, celebrating her birthday on Christmas Day, and her brother, being, well, her brother. I can't believe she's already 14. Seems like just yesterday that we had just finished opening our presents and hubby was in the kitchen making waffles on his new waffle maker and I was watching my new music video when she signaled loud and clear she wanted to join us in the flesh. Two hours later, there she was. I missed turkey dinner that year, but she was the best Christmas gift ever.

The cake of her request, thank God, was an easy one for me to make. Homemade ice cream cake. You want a crowd pleasing, easy peasy cake this is it.

EASY ICE CREAM CAKE

-1 pkg. of 24 ice cream sandwich bars
-1 large tub of cool whip
-1 can chocolate ice cream sundae topping
-1 cup frozen strawberries or mixed berries, thawed and drained (optional)
-1 pkg. skor toffee bits (available in the baking section)

In a 13 x 9 pan layer enough ice cream sandwiches to fill the bottom cutting to fit where needed. They should be snug. If using the berries, gently mix into a little less than half of cool whip. If not then use the cool whip plain. Spread over the bottom layer. Drizzle with chocolate sauce. Add another layer of ice cream sandwiches fitting snuggly. Turn over onto serving tray and remove pan. "Ice" with the remainder of the cool whip. Add a touch more chocolate drizzle on top, sprinkle with some toffee bits. And voila, ice cream cake. Refreeze for at least an hour before serving. Cut with a knife dipped in hot water.

The young lady was thrilled with her cake and her gift, that being a cell phone. Even though we put definite "rules" on it. Now today, today is Mama's birthday. And yes, I am 29, again, thank you for asking. My gift from hubby was wonderful book shelves. Totally what I wanted. Except he didn't just get me one book shelf. He got me three! My very own library. I'm sooooo excited. When we've got it all together I'll post a pic.

Meanwhile, the only other gift I want is this.

But I'll have to wait for the snooze until New Year's Day and I plan on partaking of that fully!

That cake is one I'm gonna print out if I may and make for my oldest daughter's Sweet 16 party in July....the perfect thing (although she will want chocolate something to replace the strawberries..she doesn't do those berries).LOL
It sure does look good!

That looks like a good cake! Hope y'all had fun birthday celebrations...it's hard in December sometimes isn't it. We have maybe 4+ in December and 2 in the first 2 weeks of January.
