GRILLED TANDOORI CHICKEN BREASTS
6 skinned chicken breasts
1/2 tsp. cumin
2 Tbsp. lemon juice
1/2 cup low-fat plain yogurt
1 tsp. chili powder
2 Tbsp. oil
1 tsp. ground ginger
2 cloves crushed or minced garlic
1 Tbsp. Dijon mustard
Early in the morning or the night before, mix all ingrediants in a glass container. Add chicken breasts and totally coat. Cover and refridgerate 6 - 12 hours in refridgerator. Shake or stir at least once to recoat.
Heat BBQ on high then turn to medium heat before putting on chicken. When hot, brush grill with a little oil to prevent sticking. Cook 5 minutes per side or until juices run clear. Do not over cook.
-wooden grill skewars that have been soaked in water at least 1/2 hour
-Any combination of the following veggies cut in chunks or whole if small enough eg. cherry tomatoes, zucchini, red onion, any color pepper, mushrooms
-2 Tbsp vinegar
-2 Tbsp water
-1 clove garlic crushed or minced
-2 Tbsp dill, basil or parsley
-2 Tbsp oil
Whisk together marinade ingrediants. Add veggies, stir and marinade in fridge at one hour. Grill on medium to medium high heat until you have nice grill marks turning so all sides touch grill once. If desired, brush with marinade while grilling.

GRILLED BBQ PIZZA
1 pre made 12 - 14 inch pizza shell
oil
chicken & rib bbq sauce
1 - 2 cooked chicken breasts chopped
red pepper sliced
tomatoe, sliced
mushrooms, sliced
shredded mozzarella cheese or shredded cheese combo of cheddar/mozza/montery jack
Heat BBQ to medium heat. Brush pizza shell on both sides with oil. (I prefer a light olive oil, but any you like may be used.) Place on grill, cover and grill for a minute per side.
Remove from grill and add BBQ sauce using back of spoon to spread almost to edges. Add cheese. Then chicken, then the vegetables. I like to add a little more sprinkle of cheese at this point but that's optional.
Place back on BBQ, cover and let grill until cheese is hot and bubbly. Depending on your grill, you might want to turn it down a bit. Check bottom of pizza to see if it's turning brown too quickly.

Boy, Susanne. This makes me want to crank up the grill for something besides our usual chicken or ribs. Those vegetable skewers sound wonderful!
Some great looking recipes there! Thanks for sharing them....we love chicken. Is the marinade thick because of having yogurt in it? Grilling it with all that on probably does make it really moist!

I never thought about the fact we had to soak those wooden skewers...but of course, that makes total sense- so they won't burn!
My husband got a grill for free from Craigslist - seems dads were giving them away with all their new Fathers' Day barbeques~ :) We'll have to try some of these recipes!
