Garlic Lime Chicken

I hit the floor running this morning. It's a super busy few days as I'm getting Kay (my oldest girl) ready to leave for 3 weeks. But I wanted to leave you this recipe for chicken I made the other day. To die for. Melt in your mouth chicken and it can be used in so many ways. And yes, it has garlic again. No it's not quite 40 Cloves this time.

Garlic Lime Chicken

-3 lbs. chicken pieces (you can use any pieces but I used breasts to make it more versatile)
-4 cloves garlic, crushed
-2 Tbsp. fresh basil or 1/2 Tbsp. dried
-1/4 cup fresh lime juice (I used RealLime and it was fine)
-2 Tbsp. olive oil
-fresh ground pepper to taste

Combine all the ingrediants in a container that has a cover. Toss well.

Refridgerate and let marinate minimum 2 hours. (I let it marinate 6 hours). Toss a few times during this time.

Prepare grill with a little oil to prevent sticking. Grill chicken on medium heat until juices run clear. (The bbq is wonderful but it was raining here the day I made it and I used the George Foreman and they were wonderful).

I served it with a nice light salad. If you use chicken breasts you can also grill veggies alongside and serve in tortilla shells. Yummy!


I'll try to post again, but getting a 17 year old ready to go for 3 weeks is a major undertaking. If I can't make it back to chat with you, Have a happy Canada Day to my Canadian friends. Hey, this would make a great Canada Day Meal.

This sounds divine, especially with grilled veggies and shells.

This recipe sounds delicious, and the best part is that it is totally safe for my son who has food allergies to most everything!!

Packing up kids is a tough job, good luck!!!

I think I could do this recipe. Happy Canada Day, (shouldn't it be Canadian Day?) and I'm not just copying other people before me who really knew that there is a day designated just for you. (Right.) I hope daughter has a wonderful time and Mom doesnt worry too much.
