After a month of lots of pre-made foods from Costco and super simple stuff, I'm so missing cooking. I can hardly wait to really get back to it, but for now it's still requires really thinking it through. Requirements for dinner around here right now? Simple, has to be able to be made basically one handed which means it has to be chunky, rough chopping, nothing fine. If anything needs draining I have to be sure there is someone around to do that. Likewise, if it requires putting in and out of the oven. And definitely add a chunk of time to the equation because everything takes longer to do. It has certainly been an interesting challenge. We've had a few really mediocre meals. I'm just really glad Kay works at pizza hut and we get a nice discount when she's on shift. But this week I'm trying to get back to planning rather than flying by the seat of my pants. No guarantee's on sticking to it though. ;v)
Monday: Barb's Beef Stew, home baked bread
Tuesday: Spinach/Cheese Ravioli with garlic cream sauce, tossed salad
Wednesday: Jule's Apricot Pineapple Chicken, rice, mixed beans
Thursday: Cheeseburger Macaroni, mixed vegatables
Friday: scrounge day
Saturday: Crockpot chicken creole, rice, brocolli/cauliflower
Sunday: BBQ burgers, macaroni/veggie salad

It's funny how we miss the things that we don't really want to do. Like when you go on vacation and just want one of your favorites after several days of eating out. There's a reason they call it comfort food...

Isn't it funny how me miss things when we can't do them! Sometimes I get like that about cooking too, although I never really miss the clean up. Yay for that pizza! Good menu you have there.
