Have I got an absolutely delicious recipe for you today. Every one in my family loved it!
SOUTHWEST PORK CHOPS
6 - 8 pork chops (I used boneless sirloin chops, but you can use rib chops or another less fatty cut)
2 cans (14 - 16 oz. cans)chili style beans or Mexican style beans
1 1/4 cups bottled salsa (I used medium)
1 1/2 cups frozen niblets corn
1 - 2 Tbsp. fresh chopped cilantro
salt and garlic powder to taste
cooked rice
Trim the excess fat from the pork chops. Season with salt and garlic powder. Place in bottom of crockpot.
Pour salsa and canned beans over top of chops. Sprinkle with cilantro. Cook on high for 4 hours.
Set on low and add corn, stirring to blend with beans and salsa. Cook another 1/2 hour. Add more fresh chopped cilantro on top when serving to make it look nice. Serve over cooked rice.
Has just a touch of heat. Tastes sooo good.

Sounds like a good recipe! I also like to put a couple of sliced sweet onions down in the crockpot, cover them with pork chops salt & pepper, then pour a can of cream of mushroom soup over for the day... it's always yummy.

I keep forgetting I have a crockpot. I've only used it twice since I bought it 5 months ago. This recipe may inspire me to get it out of hiding. Sounds yummy!
