
In keeping with all our goals for this year for making better choices in our lives and eating healthier, Shannon is hosting an "Eating Well" Edition of WFMW. That's "eating well" as in "getting healthy", not "eating well" as in "covered with alfredo sauce", as Shannon said.
So Shannon, how about a Healthy Creamy Mac & Cheese.
16 oz. pasta shells, rotini, or your fave pasta
2 cups fat free sharp cheese, cut into small pieces
1/4 cup fat- free shredded Cheddar cheese
1 (12 oz.) can evaporated skim milk
1/2 teaspoon lite salt
sprinkle cayenne pepper (optional)
Cook pasta according to directions. Drain well.
Combine pasta, cheeses, and evaporated milk in a saucepan over medium heat.
Cook, until cheese is melted and all is heated through.
Add salt and cayenne if desired.

My kids love Mac N Cheese. I will have to try this. It sounds good and looks easy! Which is my favorite part.

Sounds easy and de-lish! I don't like anything fat free, so, I'll have to modify the recipe. I prefer to eat less than take away flavor. lol

I just love Mac N Cheese! It's one of those things that I thought I wouldn't be able to eat often when we started following our low fat diet. But there are many yummy mac n cheese recipes out there. Thanks for sharing yours.
ReplyDeleteEden, to tell you the truth, so do I. But it was a healthy edition so I obliged. I would go with a low fat version cheese rather than no fat. I find with a lot of things no fat you have to be careful because they use other things to give it the flavor it is missing. Example is yogurts. The pump if full of sugar or aspartame to make up for the missing fat.
ReplyDeleteGail: you can usually get no fat and low fat varieties in the deli department of major grocery chains. If not there then specialty cheese shops do carry them.

SOunds yummy. I like cayenne in my mac and cheese, too. Or a little ground mustard. Gives it a kick.
