WFMW - Coconut Meringue Cookies

Today I give you an easy, easy cookie recipe. If you love coconut and chocolate this ones for you. This took no time at all and all my family loved it. Easy, yummy & my kids raving over something I baked, and fancy enough for Christmas, well, that totally works for me.

COCONUT MERINGUE COOKIES

-2 egg whites
-1/4 tsp. vanilla
-dash of salt
-2/3 cup granulated sugar
-1 1/2 sweetened shredded coconut
-1 cup semi sweet chocolate chips
-1 Tbsp. shortening

Grease baking sheets and heat oven to 325*F.

Beat egg whites & dash of salt until soft peaks form. Add the vanilla as soon as the liquid eggs white start to turn foamy and white. Gradually add sugar while beating. Beat until peaks are stiff and glossy.

Gently fold in coconut.

Drop by rounded teaspoons onto the greased baking sheets. Bake 18 - 20 minutes until set and very slightly browned. Centre will be soft.Remove carefully to baking racks and let cool completely.

When cookies are cooled, in microwave safe bowl, melt chocolate chips and shortening on high, 20 seconds at a time, stirring after each 20 seconds. Dip one side of cookie into chocolate and let excess drip off. Return to rack to let chocolate dry completely.

Or you can drizzle the chocolate on so that you get chocolate in every bite.

HINT: Kids love the dipping part. Delegate, ladies, delegate.

I was just about to look through my recipe cards and cookbooks for a new xmas cookie to serve this weekend when my in-laws are here....now I don't have to hunt! Thank you! These sound delish!! I LOVE coconut...oh, and I love the NEwsboys too! We have all their cd's!! (& my daughters love them too which is great for me and hubby!)
