Treasure Hunts and Slow Cooking


Jules at Everyday Mommy has a treasure hunt on at her place. Sounds like it will be fun! The idea is to recognize blog authors of excellence with deserving posts which may go unnoticed. There will be 8 catagories you can nominate a post in: Children & Family, Faith, Marriage, Motherhood, Homemaking, Humor, Current Events and Life. So your job is to hunt for that treasure of a post.

MIXED BEAN HAM SOUP

THE NIGHT BEFORE:

Soak 2 cups of your choice of washed, mixed dried beans in 8 cups of hot water

IN THE MORNING:

Drain, rinse and drain again the soaked beans. Add to crockpot with the following:
1 -2 meaty ham bone(s)
8 cups water
1 clove garlic, minced
1 bay leaf
1 large onion, chopped

Cover and cook on high 1 hour, then turn to low for 5 - 6 hours until bean are just tender.

Remove ham bone(s). Add:

3 cups water
2 cups medium egg noodles, uncooked
1 cup frozen mixed veggies
1 Tbsp. lemon juice
1 Tbsp. honey
salt & pepper to taste

Cover. Cook on low 1/2 hour until veggies are crisp tender. Meanwhile remove meat from bones, cut into bite sized peices and re-add to crock.

Serve with thick sliced crusty bread for dipping.

The soup sounds great! I wish someone else in this house liked soup besides me. I guess I could make it and freeze it in small containers for myself.

Lots of commenting problems tonight, Susanne. Apparently old blogger can't comment on new blogger and vice versa. Hope they get it fixed soon.

I'm excited about what Jules is doing here. I see wonderful posts all the time with one or even no comments and think, why on earth does no one know about this person.

I can't wait to get my nominations in. And I have some old friends out here who have done outstanding posts that should be brought into the spotlight, too. :-)
